Vegetable Scramble with Nutritional Yeast

With the holidays behind us and a new year ahead, I’m sure a lot of people have committed to some resolution or another. I’m not a huge fan of resolutions, I feel like they’re never accomplished and leave whoever made them feeling disappointed and sheepish. 


That being said, I did decide to do a cleanse this January. The mass amount of sugar and fat being pumped into my veins for the past few months is just discussing. Don’t get me wrong, I LOVE food and I love holiday food. It’s the one time a year that it’s completely acceptable to gorge yourself on extremely rich food and not have to feel bad about it.


I did, however, feel bad about it. Actually my guts felt bad about it, really, really bad. So here’s to healthy eating for the next month and a veggie scramble to kick it off.


Vegetable Scramble with Nutritional Yeast

  • 2 eggs
  • 1/4 cup yellow onion, diced
  • 1/4 cup broccoli, chopped
  • 1/4 cup green cauliflower, chopped
  • 1/4 cup kale, chopped
  • sea salt
  • red chili flakes
  • turmeric
  • pepper
  • nutritional yeast
  • olive oil

Heat the olive oil in a skillet over medium low heat. When the oil on hot, add in the veggies and begin to caramelize.

Sprinkle sea salt, pepper, turmeric and red chili flakes on the veggies. Continue to cook until the vegetables are soft and fragrant.

In a small bowl, beat the eggs. Add them to the vegetable mixture and cook until done.

Top with a sprinkle of nutritional yeast and more salt and pepper if desired.
